I looooove banana bread. It's so good for breakfast, brunch, and snacks. I've been known to eat way more than my fair share whenever it's on my counter (or in my freezer). It's especially good for a potluck or brunch because you an make it ahead of time, then slice it and serve it.

PANCAKE MIX! Yes, that's right. This bread starts with Krusteaz Pancake Mix. You just add a few other ingredients, like banana and strawberries, and then bake it. It turns into BREAD!
So, let's get this straight: Banana Bread that's made from pancake mix. Like eating pancakes in bread form but they don't taste like pancakes, they taste like banana bread.

Not only did I throw a good handful of freshly chopped strawberries into this bread, but I also made an easy strawberry glaze using strawberry extract. Feel free to just use vanilla extract, if you prefer, but I like that punch of strawberry flavor.

Easy Strawberry Banana Bread - a banana bread made from pancake mix and filled with tons of strawberries and a strawberry glaze on top. Perfect for brunch!
Ingredients:
- 2 large eggs
- 1/4 cup water
- 1 medium brown-spotted banana, mashed
- 2 teaspoons vanilla extract, divided
- 1/2 cup vegetable oil
- 1/3 cup granulated sugar
- 2 cups Krusteaz Pancake Mix
- 1 cup chopped strawberries
- 3/4 cup powdered sugar
- 1/8 teaspoon strawberry extract
- 2-3 tablespoons heavy whipping cream
- 1-2 drops red food coloring, optional
