Peanut-Maca Bananaicecream w/ Chia-Vanilla Pudding & Blueberries

A dream-team combination and almost too good to eat!

I could eat this all day everyday!! That I'm a complete Bananaicecream addict is no secret anymore; but this combo just makes you wanna dive into the jar and never ever come out of it again! All you gotta do in advance is pop some peeled & sliced ripe bananas into the freezer the night before and make the chia pudding. Like that it will literally take you 10 minutes only in the morning to make this jar of goodness!

I'm 100% sure you know what peanut butter is! But you don't know Maca? Maca powder belongs to the group of superfoods and originally comes from the maca root, which is dried and then processed into a fine powder. It contains a lot of protein, minerals and vitamins and only about a teaspoon a day added to your breakfast, shakes, smoothies or baked goods can support your health. Maca powder has a pretty strong, unique taste that I personally loved from the beginning! Give it a try, the more you add it to your bananaicecreams, smoothies & porridges, the better it gets! I'm a complete addict now haha!:P

SERVES 1-2 / GF, DF, VGN, RSF

(Pop the peeled & sliced ripe bananas into the freezer and also make the chia pudding the night before. Like that it will literally take you 10 minutes only in the morning to make this jar of goodness!)

FOR THE CHIA PUDDING:

3 tbsp chia seeds, black or white (I used white)

250 ml almond milk

1 tsp pure vanilla extract or seeds of 1/2 vanilla bean

2–3 tsp coconut blossom sugar or pure maple syrup

FOR THE BANANA ICE CREAM:

2 super-ripe bananas, in slices, frozen

100 ml milk of choice, e.g. soy/almond/ rice milk

1 tbsp peanut butter, homemade/sugar-free

2 tsp maca powder

1 tsp pure vanilla extract or seeds of 1/2 vanilla bean

2–3 tsp coconut blossom sugar or pure maple syrup ( if you like it sweet like me ;))

REMAINING INGREDIENTS:

2 handful fresh blueberries

crushed peanuts

  1. Add the chia seeds, milk, vanilla extract and sweetener into a bowl and stir until well combined. Soak in the fridge overnight or for at least two hours.
  2. Take the frozen banana slices out of the freezer and thaw for a few minutes. Add into a blender/food processor with all the other ingredients and blend until smooth and creamy.
  3. Stir the chia pudding again to avoid chunks and add into a jar alternately with the banana ice cream & blueberries to the top. Sprinkle some crushed peanuts or 1 tbsp of your favorite crunchy granola on top and enjoy, enjoy, enjoy! (With a long spoon to dive all the way to the bottom & get a little bit of everything on the spoon!;))
