Meals that my toddlers will happily eat and hardly take much time out of the day to prepare.

So for all of your crazy busy, sometimes overwhelmed Mom's out there, I'm sharing this meal with you in mind! I hope your family loves it as much as mine.

The garlic parmesan chicken tenders are lightly breaded and baked just until tender. They're so flavorful. I like to double this recipe and save the leftover chicken to add to wraps or serve on top of a yummy salad. You can even dunk them in your favorite sauce, like (healthier) chicken tenders!

One Pan Garlic Parmesan Chicken and Vegetables

Ingredients

  • 6 boneless skinless chicken tenders (or 2-3 chicken breasts, cut into 2 inch strips)
  • 1/3 cup olive oil
  • 1 Tablespoon  minced garlic 
  • 3/4 cup plain bread crumbs or panko bread crumbs
  • 1/2 cup finely grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper
  • Fresh parsley, for garnish (optional)
  • For the vegetables:

  • 1 green zucchini, cut into 1/2-inch thick slice, then sliced in half
  • 1 yellow squash,cut into 1/2-inch thick slice, then sliced in half
  • 1 cup grape tomatoes, sliced into halves
  • 1-2 Tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper
  • 1/2 cup finely grated parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. 
  2. In a shallow bowl add the olive oil and garlic and stir together.
  3. In another shallow dish add the bread crumbs, parmesan, garlic powder, Italian seasoning and and season with salt and pepper to taste.
  4. Dip each chicken tender in the olive oil and garlic, and then in the bread crumbs mixture, pressing the bread crumbs into the chicken on both side. Transfer to the center of the prepared baking sheet. Press remaining breadcrumbs on the tops of the chicken and gently press. 
  5. Bake chicken for 10-12 minutes.
  6. While chicken cooks, add the zucchini, yellow squash and cherry tomatoes to a bowl. Drizzle with olive oil, Italian seasoning, garlic and salt and pepper. Toss to coat. 
  7. Remove chicken from oven. Carefully flip each piece of chicken to the other side. Spread veggies along both sides of the chicken. Sprinkle remaining 1/2 cup parmesan cheese over everything.
  8. Return to oven and bake for an additional 10-12 minutes, or until chicken is cooked through.
  9. Serve warm. Garnish chicken with fresh parsley, if desired.
