Papaya Summer-Boats w/ a Cashew-Vanilla-Cinnamon Ice-Shake to die for!

All you need when it's so hot outside! Can I have this x2 please?!

Wow, we just had 2 absolutely beatiful & sunny days here in Zurich. People are sitting outside, wearing sunglasses, sipping on ice-cold drinks, having a good time, enjoying time with friends & family and soaking up the sun at the lake and everywhere outside in the city!! Today it was over 32 degrees! Which is cool.. only kind of though haha. I love summer but am not a fan of when it's too hot! Like 25 degrees is prefect for me. I always say my favorite weather is the "flipflop-light-sweater-kind-of-cloudly-but-warm-wind-kinda-weather". Does that make sense haha? Yap, I'm the one who only lies in the sun to get tanned and not because I like to sweat my heart out! So shade all the way. Except for tanning. Good thing I get tanned very quickly! Okay this is going a little far off the road now haha let's get back to food!

So all I really feel like eating when it's so hot out is fresh and most importantly cooled fruit & ice-cold smoothies & shakes. Or bananaicecream & acai-bowls; obviously! It just has to be something cold!;) My favorite fruit to eat when it's boiling outside are all kinds of melon, papaya & mangoes. Juicy & sweet fruit! You can go for whatever fruit you like best but please guys, make sure to pop your ripe fruit in the fridge for a couple of hours and enjoy them once they're nice & cool! So, so much better and way more refreshing!

Papayas are great to make little fruit bowls. It doesn't only look pretty, it's also more fun to eat! You could also whole out the papaya-halves a bit and add some bananaicecream inside. Let your imagination run wild!:)
I simply made a Papaya-Fruit-Salad-Boat with this incredibly delicious, refreshing & mouth-watering Cashew-Vanilla-Cinnamon Ice-Shake on the side! You have to try this shake it's like heaven! Super easy recipe made in no time!

So before the rain is coming back (especially here in Switzerland where it's been raining for like the past 2 weeks!) make sure to make your own Papaya-Boats, invite friends over and surprise them with this shake on the side! They're gonna love it I promise! And if they don't like it- you have more for yourself! Not so bad either!:P



SERVES 2 / GF, DF, VGN, RSF

(Pop the peeled & sliced ripe bananas into the freezer the night before if you don0t have any frozen ones yet)

FOR THE PAPAYA-BOATS:

1 large papaya, ripe

2 handful of raspberries

2 handful of strawberries

1-2 baby-bananas each

1/2 handful of pomegranate arils each

a drizzle of pure maple syrup or some coconut blossom sugar

FOR THE CASHEW-VANILLA-CINNAMON SHAKES:

250 ml cashew-, almond-, soy-, or ricemilk ( I used Cashew Milk from Provamel)

2 heaped tbsp roasted cashews (or 3 tbsp haha. so so good.:P)

(roast in the oven at 180 for 10 minutes until golden brown, take out & let cool completely)

2 frozen bananas

150-250 ml water

10 icecubes

2 tsp vanilla extract

1-1.5 tsp cinnamon (depending on how cinnamon-y you like it!)

1 dash of himalaya salt (brings out the sweetness so much more!)

1 tbsp coconut blossom sugar or pure maple syrup

  1. Roast the cashews in the oven at 180 for 10 minutes until golden brown, take out & let cool completely.
  2. Cut the papaya in half, scrape the seeds out and add the berries inside. Cut the baby-bananas into thin slices and add on top of the papaya boats. If you want to add some sweeteness, add a drizzle of pure maple syrup or coconut blossom sugar on top!
  3. Take the bananas out of the freezer and thaw for a few minutes. For the Shake, add all the ingredients including the bananas into a good blender ( make sure to use a blender who can handle ice!) and blend to a smooth and creamy shake. If the shake is too thick for you, add more water until you reach the consistency you like!
  4. Serve immediately with the papaya fruit boats and enjoy!:)
